Baked Chicken Roll Ups
This is a recipe that pairs great with a fresh sautéed/roasted vegetable, side salad or mashed potatoes. It has a rich taste and makes a great family supper.
When serving, I use my Garlic Parmesan Cheese Sauce. You could also use a marinara if you prefer.
Ingredients
- -2 1b Chicken Breasts
- - 2 1/2 Cups Lightly Packed Chopped Spinach
- - 1 Cloves Minced Garlic
- -1/2 Cup Diced Onion
- -1 Tablespoon Olive Oil
- -1/2 Cup Ricotta Cheese
- -1/2 Cup Shredded Mozzarella
- -Greek Seasoning to taste
- -Salt and Pepper to taste
- -Panko Bread Crumbs (enough to bread the breasts)
- -2 Eggs (Lightly Beaten)

Place 1 tablespoon of olive oil into a medium sauce pan placed over medium heat. Add onion and Sautee until beginning to brown.
Add Chopped Spinach and garlic, cook until wilted. (approximately 45-60 seconds)
Add Ricotta Cheese and salt to taste, cook/stir until combined. (1-3 minutes)
Set mixture aside and let cool to room temp.
While cooling, Start to prep chicken breasts.
Trim fat.
Many chicken breast are very large. I like to cut to 4-6 ounces before tenderizing. You can leave larger if you would like. The one pictured above was almost one pound so I cut into three pieces.
Tenderize one piece at a time. Lay a piece of plastic wrap over the piece that you are going to tenderize. This keeps the surrounding area clean.
Once all pieces are tenderized, season both sides with your favorite Greek Seasoning.
Once the spinach mixture is cooled, mix in mozzarella cheese.
Spoon the mixture onto the chicken. Roll the chicken up.
Dip the rolled up chicken into egg and then in the bread crumbs.
Place in greased baking dish.
Bake at 350 degrees for 35-45 minutes or until internal temperature of the chicken reaches 165 degrees.
If you plan to use the Garlic Parmesan Cheese Sauce (which I highly recommend) you would want to make it while the chicken is baking.
Remove from oven and let rest for 5 minutes.
When serving spoon some of the Garlic Parmesan Cheese Sauce over the piece of chicken.

Directions (Chicken)
1. Sautee onions until they begin to brown.
2. Add spinach and garlic. cook until wilted.
3. Add ricotta and salt to taste. Cook until combined.
4. Set mixture aside and let cool.
5. Prep chicken breast and cut into 4-6 ounce pieces.
6. Tenderize chicken.
7. Once spinach mixture is cooled stir in Mozzarella.
8. Season chicken and spoon mixture on chicken and roll up. (one piece at a time)
9. Dip rolled up chicken in lightly beaten egg and then bread crumbs.
10. Place in greased baking sheet.
11. Bake at 350 degrees for 35-45 minutes.
12. While chicken is baking make the parmesan cheese sauce.
13. Remove from oven and let rest for 5 minutes.
14. when serving spoon Parmesan cheese sauce over the chicken.

This is one of my favorites of yours! Because the store never has ricotta cheese I use cottage cheese that I’ve strained/pressed most of the liquid out of. It works great!
