Chicken Burgers


These chicken burgers are packed with flavor! I grind boneless skinless chicken thigh meat for these, but you can find ground chicken at a local meat department or request them to grind it for you. If you want to make them a little healthier, you can use breast meat.

Ingredients

Chicken burgers
  • 1 1/2 pounds ground chicken
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 egg
  • 1/2 cup bread crumbs
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • juice of 1/2 lemon
  • Greek seasoning

Avocado Spread
  • 2 ripe avocados 
  • 1 teaspoon olive oil
  • 3 teaspoons Lemon juice
  • 1/4 teaspoon salt
  • pinch garlic powder
  • pinch pepper


Combine chicken, salt, garlic powder, pepper, parsley, chives, egg and bread crumbs in a bowl. Mix until combined. 


Form into desired size of patty. I make them around a quarter pound. 



Place on sheet pan, cover with plastic and place in fridge for at least 1 hour. 

While the patties are resting, mix up the avocado spread. Combine all ingredients for the spread and mash with a fork until combined and avocados are desired consistency (I like to leave it a bit chunky). Cover and place in fridge. 






Remove patties from fridge. Brush on both sides with olive oil and lightly season with Greek seasoning. 



Grill on preheated grill on medium high heat for 8 minutes on first side, and 6-8 minutes on second side (or until the internal temperature reaches 165 degrees). Be sure to scrape and grease your grill grates. 



When burgers are almost done, brush with lemon butter (melt butter in a microwave safe bowl and stir in lemon juice).



Remove from grill and allow to rest for 2 minutes. 

Serve with avocado spread and other desired toppings.
