Simple Peanut Butter Cups

This recipe was a favorite of mine growing up. It is easy enough for kids to help and are a great treat!

Ingredients
  • 12 ounce package of semi-sweet chocolate chips
  • 8-12 tablespoons (approximately) smooth peanut butter
  • 12 muffin liners

Place muffin liners in muffin pan.

Cover the bottom of each liner with chocolate chips.

Turn oven to broil. Soften chocolate by placing the pan on the middle rack under the broiler. Broil for 1-2 minutes or until chocolate is slightly softened (you don't want to over heat the chocolate).

Using a toothpick spread chocolate to cover the bottom.

Place the pan in freezer for at least 5 minutes to harden chocolate.

Remove from freezer. Spread a thin layer of peanut butter on top of the hardened chocolate.

Return to broiler for 1 minute. Remove from broiler and place in freezer for at least 10 minutes to harden peanut butter.

Cover the peanut butter with a layer of chocolate chips. Return to broiler for 1-2 minutes or until chocolate is slightly softened. Use a toothpick to spread the chocolate out. Don't worry if they don't look perfect!

Return to freezer for 20 minutes. Store in a large freezer bag in the freezer. Serve directly out of the freezer (they will become sticky if they are out too long).
