Chicken Fingers



This is a fairly simple recipe that makes a crispy delicious chicken finger. Parker enjoyed helping cook and eat these!


Ingredients

  • 1 pound chicken breast
  • pinch salt and pepper
  • 1/2 cup flour
  • 2 eggs
  • 2 tablespoons milk
  • peanut oil

Breading

  • 1/2 cup flour
  • 1/2 cup Italian style bread crumbs
  • 1/2 teaspoon garlic salt
  • 1 teaspoon Greek seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • pinch of cayenne (or to taste)
  • pinch of mustard powder


Cut chicken breasts into 1/2 inch strips.



Lightly season chicken with salt and pepper.



Roll chicken in flour.



Lightly beat eggs with milk in a medium bowl.



Combine breading ingredients in a separate medium bowl.



Dip each piece of chicken (one at a time) in the egg. Allow excess egg to drip off.

Place the chicken in the breading mixture. Make sure the chicken is completely coated and place on a plate until you are ready to fry. Repeat this process for each piece of chicken.



In a medium fry, add 1/4 inch of oil (I use peanut oil, but any oil with a relatively high smoke point will work). Heat oil over medium heat.



Fry the chicken fingers for 2-4 minutes on each side or until cooked fully. Remove from pan and place on paper towel lined plate.



Serve with BBQ Sauce or sauce of choice.
