Roasted Vegetables



This is a delicious and healthy way to enjoy veggies.

Ingredients
  • 1/2 head of cauliflower
  • 1/2 head of broccoli 
  • 1/2 bag baby carrots
  • 1/2 teaspoon Greek seasoning or to taste
  • 1/2 teaspoon seasoned salt or to taste
  • 3 - 4 tablespoons olive oil
  • juice of 1/2 lime (if you like a lot of lime you can use the juice of a whole lime)

Cut cauliflower and broccoli to desired size (I try to cut them bite size).



Combine veggies in a bowl. Add olive oil and toss to mix.

Add lime juice and seasoning. Stir until well combined.



Pour onto a cookie sheet. Spread out evenly.



Bake at 425 degrees for 25 - 35 minutes. Stir every 10 minutes. Vegies are done when they are starting to brown on the edges.
