Feta Stuffed Chicken Breast




This Greek-inspired chicken breast recipe is simple and flavorful. The feta cheese adds a delicious flavor and pairs great with the cucumber (Tzatziki) sauce.

Makes 4 chicken breasts.

Ingredients

Cucumber (Tzatziki) Sauce

  • 1 cup chopped cucumber (peeled and seeds removed)
  • 12 ounces Greek yogurt
  • 2 1/2 teaspoons dried dill
  • 1/8 teaspoon garlic powder 
  • Salt and pepper to taste

Chicken Breasts

  • 4 chicken breasts
  • 8-12 slices of bacon (I prefer Hormel Black Label bacon)
  • 5 ounces feta cheese 
  • Greek seasoning (I prefer locally made Kusina Gold Greek Seasoning)
  • olive oil


Cucumber (Tzatziki) Sauce

Peel cucumber and remove seeds with a spoon.



Chop the cucumber into small pieces.

In a medium bowl, combine all ingredients. Mix well and refrigerate for at least 60 minutes before serving.




Chicken Breasts

Cut a pocket in the chicken breast. Take your time to be sure not to cut yourself or through the breast. If you happen to cut through the breast, you can cover the hole later with bacon.





Rub olive oil inside the pocket.

Season the inside of the pocket with Greek seasoning.



Stuff the feta in the pocket.



Season the outside the breast with Greek seasoning.



Wrap with bacon and secure with tooth picks.



Prepare grill. Gas or charcoal will work great. If using gas, be cautious of flare ups.

Rub the bacon wrapped chicken breasts with olive oil and season lightly with Greek seasoning.



Grill over medium to medium high heat until they have reached 165 degrees. 25 - 35 minutes depending on grill temp.

Remove from grill. Cover with foil and allow to rest for 5 minutes.

Serve with cucumber (Tzatziki) sauce.
