Ham and Mixed Bean Soup





After the holidays, someone in the family usually has a ham bone that can be used to make soup. On a cold winter day, a hot bowl of soup makes the house smell great and warms you right up!


Ingredients

  • 1 ham bone ( I like to leave a little meat on it)
  • 1 package of dry beans (soup mix)
  • 3 cups of cubed ham (include any meat that you can remove from the bone)
  • 10 cups water
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 medium onion, chopped
  • 1 tablespoon beef base powder
  • 1 tablespoon chicken base powder
  • 2 teaspoons salt
  • 1 bay leaf
  • 1 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/4 teaspoon ground mustard

Rinse and sort beans.


In a large pot, add 10 cups of water, beans, ham bone, salt and bay leaf. Bring to a boil. Cover and boil for 3 minutes, the remove from heat and let stand for 60 minutes with the lid on.



After 60 minutes, return to a boil and add remaining ingredients except cubed ham. Reduce heat to a simmer, and simmer for 45 minutes.



Remove the ham bone from the pot. Trim any usable ham off and add the ham back to the pot. Add additional cubed ham until 3 cups total have been added. Simmer for an additional 60 minutes.



Keep warm for serving. Refrigerate or freeze leftovers.
