Pickled Onions
I am always trying to find a way to make small changes to everyday foods. Pickled onions are a simple way to elevate many dishes. They are a great addition on sandwiches, tacos or salads!
Ingredients
1 large red onion
2 1/2 cups white vinegar
1 cup water
4 garlic cloves, smashed
2 teaspoons salt
1 teaspoon sugar
First peel and slice the red onion. Cut the slices in half. I leave some of the smaller ones as round rings.
Place onion and garlic in a large glass bowl or of couple canning jars.
In a pot over medium heat add vinegar, water, salt and sugar. Bring to a boil.
Let this cool for a few minutes. While still hot, pour over the onions.
Let cool, cover and store in fridge. You can use them after a couple hours or overnight. They will turn a beautiful pink.
These keep for a couple of weeks in the fridge.
