Chicken Parmesan Penne



This is a great week night meal and makes good leftovers! Parker loves noodles so this recipe is one of his favorites.

Ingredients

1 - 12 ounce package of Penne noodles
1 pound chicken breast
1 cup shredded Parmesan cheese
1/2 pint heavy cream
2 cloves garlic, chopped
2 tablespoons olive oil
2 tablespoons butter
1 tablespoon Greek seasoning
Salt and pepper to taste


Cube chicken breasts.



Add two tablespoons olive oil in large skillet over medium heat.



Bring water to boil in large pot. Add two tablespoons of salt to the water.

Add chicken to the skillet and season with Greek seasoning.



Add noodles to boiling water. Cook until al dente while stirring occasionally.

Cook chicken until cooked all the way through (approximately 5-10 minutes). Add garlic and butter. Cook until butter is melted.



Strain noodles and set aside.

Add heavy cream. Bring to a simmer.



Add parmesan to the cream and stir until melted and combined. Salt to taste.

Add noodles to the skillet and stir until completely coated. Removed from heat.



Let stand for two minutes before serving.



When plating, top with grated parmesan cheese.



Refrigerate leftovers.

  11. Let stand for two minutes before serving. 
  12. When plating top with grated parmesan cheese. 
  13. Refrigerate leftovers.
