Savory Scones


I have always preferred savory over sweet food. I first saw savory scones at a farmers market in Superior, WI. Since then I have been experimenting with the idea, and this is what I have come up with.


Ingredients
  • 3 Cups Flour
  • 3/4 Pound of Bacon
  • 2 Ounces Cream Cheese (Cold)
  • 3 Tablespoons Butter (room temperature)
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Garlic Salt
  • 1 1/2 Tablespoons Baking Powder
  • 1 Tablespoon Sugar
  • 1 3/4 Cups Cubed Cheddar Cheese
  • 1/4 Cup Chopped Chives
  • 1 1/2 Cups Heavy Cream

Combine flour, garlic powder, garlic salt, baking powder and sugar in a bowl. Stir with fork until well combined. You could also use a sift. 




Cook bacon and crumble. I like to use thick cut bacon. Set aside and let cool to room temperature. 



Cut cheese into small cubes. Set aside. 



Chop chives. Set aside. 

Add bacon, cheese and chives to the flour mixture. Toss until combined. 




Add butter and cream cheese. mix until crumbly. I find it best to use your hands while mixing in the butter and cream cheese.  


Add heavy cream and mix until dough comes together. If the dough is still falling apart add more cream.  Work with it until it holds together and stop. You don't want to over work the dough. Again, I feel that using your hands makes this process more successful.  



Move dough to greased baking sheet. Pat dough out (with hands) into 1" - 1 1/4" thick round. 





Cut the dough into 8 pieces. 



Separate pieces so that they are about 1 inch apart. 




Brush with melted butter and sprinkle with garlic salt. 

Preheat oven to 400 degrees. Place scones in the oven and bake for 28 to 35 minutes or until top is 
browned.
