Our Favorite Chili

With the first day of fall passing by and feeling a chill in the morning air, I felt it was appropriate to make chili. This chili is one of our favorites on a cold fall/winter day.

This is a recipe that we like to change up sometimes. We have used several different meats that have turn out great. Sometimes we use leftover meat like brats or smoked meats. We have also used diced chicken or ground pork.

When making chili you can also use different kids of beans. Some brands of chili beans have a variety of bean types in chili sauce.

Ingredients

  • 1/2 Pounds Ground Beef
  • 1/2 Pound Ground Italian Sausage
  • 1 Cup Chopped Onion
  • 1/2 Cup Chopped Green Pepper
  • 2 Cloves Minced Garlic
  • 1 Bay Leaf
  • 2 1/2 Tablespoons Chili Powder
  • 1/2 Teaspoon Ground Cumin
  • 1/4 Teaspoon Ground Cayenne or to taste
  • 3 Teaspoon Garlic Salt
  • 1 (29 oz) Can Diced Tomatoes
  • 1 (15 oz) Can Tomato Sauce
  • 2 (15 oz) Cans Mild Chili Beans
  • 1 Can Rotel
  • 1 Tablespoon Molasses
  • 1 Tablespoon Worcestershire Sauce
  • 1 Tablespoon Liquid Smoke
Brown ground beef in medium to large skillet. Drain grease and put in ground beef in the crock pot. Brown ground Italian sausage is same skillet. Drain grease and put the Italian sausage in the crock pot.

Add 2 tablespoons of olive oil in skillet. Over medium heat, cook green pepper and onion until onion become slightly translucent. Move to crock pot.

Add diced tomatoes, tomato sauce and Rotel to crock pot.

Add remaining ingredients except chili beans.

Turn crock pot on low for 4 hours.

After 4 hours add chili beans and reduce to keep warm.

Allow beans to warm through. We like to serve with cheese and either corn bread or crackers. Serve and enjoy.
